Lean Chinese Chicken Salad

Ingredients

  • 6 tablespoons Safeway SELECT Seasoned Rice Vinegar
  • 2 teaspoons sugar
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon soy sauce
  • 2 1/2 cups shredded skinned cooked chicken
  • 8 cups finely shredded rinsed and crisped iceberg lettuce
  • 1 cup cherry tomatoes, rinsed and cut in half
  • 1/2 cup thinly sliced green onion
  • 1/2 cup fresh cilantro
  • 6 large iceberg lettuce leaves, rinsed and crisped

Directions

  1. In a large bowl, combine vinegar, sugar, oil, 1 tablespoon soy sauce, and chicken. Add shredded lettuce, tomatoes, onions, and cilantro; mix.
  2. Mound salad equally onto lettuce leaves on 4 plates. Add more soy sauce to taste.
Notes:
  • Whole cilantro leaves add bold color, but you can chop them if you prefer.
  • To trim additional sodium, use reduced sodium soy sauce.
